J'ai commenc\u00e9 \u00e0 fabriquer mon premier levain il y a environ 2 \u00bd ans, avec l'id\u00e9e qu'il serait extraordinaire de faire du pain enti\u00e8rement \u00e0 partir de z\u00e9ro. Depuis, j'ai appris les immenses bienfaits du pain au levain pour la sant\u00e9 et j'ai d\u00e9couvert que son go\u00fbt est tout simplement incomparable. Bien qu'un pain n'ait pas besoin d'\u00eatre beau pour \u00eatre savoureux et d\u00e9licieux, je dois dire que je tire une satisfaction particuli\u00e8re d'un pain avec un bon ressort au four, une belle \u2018 oreille \u2019 et peut-\u00eatre quelques jolies rayures. Cependant, il m'a fallu beaucoup de temps pour obtenir les r\u00e9sultats que je souhaitais. Il s'agit en grande partie d'essais et d'erreurs, mais la diff\u00e9rence entre la farine fran\u00e7aise, \u00e0 laquelle j'ai acc\u00e8s, et la farine \u00e0 pain am\u00e9ricaine, que la plupart des influenceurs du monde du pain utilisent, y est pour beaucoup. Au cours du processus de fermentation et d'\u00e9tirement du levain, le gluten se d\u00e9veloppe et cr\u00e9e des poches dans le pain dans lesquelles l'air est emprisonn\u00e9, ce qui permet au pain de lever. Plus la teneur en gluten de la farine est \u00e9lev\u00e9e, plus le pain l\u00e8vera. Le gluten de la farine fran\u00e7aise semble \u00e9galement plus faible que celui de la farine am\u00e9ricaine, de sorte que m\u00eame si la teneur en prot\u00e9ines n'est que l\u00e9g\u00e8rement inf\u00e9rieure, la farine ne l\u00e8vera pas aussi bien. Je pense que le rapport utilis\u00e9 dans cette recette fonctionne parfaitement. La p\u00e2te est maniable, le pain l\u00e8ve bien, j'ai un bon ressort au four et la mie reste l\u00e9g\u00e8re et a\u00e9r\u00e9e.<\/p>\n\n\n\n<p>La principale le\u00e7on \u00e0 retenir est que, lorsque vous utilisez de la farine fran\u00e7aise, n'essayez pas de suivre \u00e0 la lettre les recettes de levain am\u00e9ricaines ou m\u00eame britanniques, car elles ne fonctionneront pas de la m\u00eame mani\u00e8re.<\/p>\n\n\n\n<p>Il ne faut pas croire que c'est une mauvaise chose ! La farine fran\u00e7aise est r\u00e9put\u00e9e pour \u00eatre plus savoureuse et pour donner une meilleure couleur au produit fini. En regardant les ingr\u00e9dients de ma farine, je ne vois que du bl\u00e9, alors qu'une farine \u00e0 pain am\u00e9ricaine ou britannique contiendra souvent du gluten ajout\u00e9, du son, des vitamines ajout\u00e9es et des conservateurs. Il doit \u00eatre suffisamment grand pour que la p\u00e2te puisse presque doubler pendant la fermentation.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Balance num\u00e9rique<\/h3>\n\n\n\n<p>Ils donnent des mesures tr\u00e8s pr\u00e9cises et \u00e9liminent une grande partie de l'incertitude li\u00e9e \u00e0 la cuisson du pain. Ils sont utiles \u00e0 tout cuisinier qui aime faire du pain, quel qu'il soit.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Crochet \u00e0 p\u00e2te<\/h3>\n\n\n\n<p>C'est utile pour m\u00e9langer la p\u00e2te et je trouve que cela fait moins de d\u00e9g\u00e2ts qu'avec les doigts. Elle est toutefois totalement facultative.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Banneton<\/h3>\n\n\n\n<p>C'est dans cette p\u00e2te que le pain reposera pour la deuxi\u00e8me fermentation, \u00e0 froid, et c'est elle qui donnera au pain sa forme d\u00e9finitive. Ils peuvent \u00eatre ronds ou ovales (batard). J'ai d\u00e9j\u00e0 utilis\u00e9 un bol tapiss\u00e9 d'un torchon, ce qui peut \u00e9galement convenir.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Plateau de cuisson<\/h3>\n\n\n\n<p>Votre plaque de cuisson normale sera parfaite. J'utilise actuellement une plaque antiadh\u00e9sive.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Casserole peu profonde<\/h3>\n\n\n\n<p>Je l'expliquerai plus en d\u00e9tail ci-dessous, mais il s'agit de cr\u00e9er de la vapeur pendant le processus de cuisson.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Lame&nbsp;<\/h3>\n\n\n\n<p>Cette lame de boulanger sert \u00e0 marquer le pain, ce qui est important pour obtenir une miche bien lev\u00e9e.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients pour un pain au levain simple \u00e0 base de farine compl\u00e8te fran\u00e7aise<\/h2>\n\n\n\n<p>120 g de levain actif et p\u00e9tillant<\/p>\n\n\n\n<p>500 g de farine fran\u00e7aise compl\u00e8te biologique (T110)<\/p>\n\n\n\n<p>350 g d'eau chaude<\/p>\n\n\n\n<p>10g de sel<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Levain<\/h3>\n\n\n\n<p>Si vous n'avez pas encore de levain, ne vous inqui\u00e9tez pas, c'est facile, il faut juste quelques jours pour qu'il se mette \u00e0 bouillonner ! J'utilise une ration de 1:2:2, c'est-\u00e0-dire 30 g de levain, 60 g d'eau et 60 g de farine. Cela permet d'obtenir un levain tr\u00e8s fort qui donnera une bonne lev\u00e9e \u00e0 votre pain.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Farine fran\u00e7aise compl\u00e8te biologique<\/h3>\n\n\n\n<p>Cette farine est appel\u00e9e T110 et je l'aime pour sa saveur qui n'est pas trop forte (la farine compl\u00e8te plus fonc\u00e9e serait T150).&nbsp;<\/p>\n\n\n\n<p>Veillez \u00e0 ce que votre farine soit biologique et du bl\u00e9 100% sans additifs. J'ai utilis\u00e9 la marque maison biologique d'un supermarch\u00e9 bien connu, elle co\u00fbte 1,50\u20ac\/kg et fonctionne parfaitement.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Eau chaude<\/h3>\n\n\n\n<p>En ce qui concerne la temp\u00e9rature, je ne suis pas tr\u00e8s pr\u00e9cise, mais elle ne doit certainement pas \u00eatre chaude. Si vous utilisez de l'eau froide, cela ralentira le processus de fermentation, ce qui peut \u00eatre une bonne chose pendant les mois d'\u00e9t\u00e9 lorsque la temp\u00e9rature de votre pi\u00e8ce est \u00e9lev\u00e9e.<\/p>\n\n\n\n<p>J'utilise g\u00e9n\u00e9ralement de l'eau du robinet, mais j'ai entendu dire que l'on obtient de meilleurs r\u00e9sultats en utilisant de l'eau filtr\u00e9e. Dites-moi dans les commentaires ce que vous en pensez si vous avez essay\u00e9 !<\/p>\n\n\n\n<p>Je suis cependant tr\u00e8s pr\u00e9cise quant \u00e0 la quantit\u00e9, car si vous mettez trop d'eau dans votre p\u00e2te, elle deviendra collante et difficile \u00e0 g\u00e9rer. Croyez-moi, j'ai commis cette erreur \u00e0 plusieurs reprises. Pour la farine T110 que j'utilise, qui a une teneur en prot\u00e9ines de 11%, 350g d'eau est la quantit\u00e9 parfaite.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Sel<\/h3>\n\n\n\n<p>10 g de sel peut sembler une quantit\u00e9 importante, mais elle est tout \u00e0 fait n\u00e9cessaire. Vous obtiendrez un pain tr\u00e8s fade si vous r\u00e9duisez la quantit\u00e9 de sel.<\/p>\n\n\n\n<p>J'utilise du sel fin de table\/casher.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Proc\u00e9d\u00e9 simple de fabrication d'un pain au levain \u00e0 base de farine compl\u00e8te fran\u00e7aise<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">La veille :<\/h3>\n\n\n\n<p>Nourrissez votre levain 1:2:2 (par exemple 30 g de levain, 60 g de farine, 60 g d'eau chaude). J'utilise un banneton ovale doubl\u00e9 de lin que je farine avec de la farine de ma\u00efs ou de bl\u00e9. Les bannetons ronds conviennent \u00e9galement \u00e0 cette recette, ou m\u00eame un bol tapiss\u00e9 d'un torchon !<\/p>\n\n\n\n<p>Mettez votre banneton de p\u00e2te au r\u00e9frig\u00e9rateur pendant environ 8 heures ou toute la nuit jusqu'\u00e0 ce que vous soyez pr\u00eat \u00e0 cuire. Faites bouillir de l'eau.<\/p>\n\n\n\n<p>Lorsque le four est \u00e0 temp\u00e9rature, sortez votre p\u00e2te du r\u00e9frig\u00e9rateur et d\u00e9posez-la sur la plaque \u00e0 p\u00e2tisserie. Elle doit bien se tenir.<\/p>\n\n\n\n<p>\u00c0 l'aide de votre lame de boulanger, entaillez le pain, l\u00e9g\u00e8rement excentr\u00e9, en tenant la lame \u00e0 environ 45\u00b0.
