Et je suis convaincue que la focaccia au levain est un produit sup\u00e9rieur \u00e0 tous les autres. En plus d'\u00eatre plus sain gr\u00e2ce \u00e0 la fermentation du gluten pendant la nuit, le levain ajoute une saveur acidul\u00e9e qui met l'eau \u00e0 la bouche. Il est possible de la r\u00e9aliser avec des restes de levain, mais la fermentation et la lev\u00e9e prendront beaucoup plus de temps.<\/p>\n\n\n\n<p>Si vous n'avez pas de levain mais que vous souhaitez en fabriquer un, consultez le site suivant <a href=\"https:\/\/www.theclevercarrot.com\/2019\/03\/beginner-sourdough-starter-recipe\/\">cet article<\/a>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Farine<\/h3>\n\n\n\n<p>J'utilise de la farine \u00e0 pain, ou farine T65 ici en France. J'aime la texture l\u00e9g\u00e8re qu'elle donne au pain.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Oignons<\/h3>\n\n\n\n<p>Lorsque les oignons sont caram\u00e9lis\u00e9s, ils d\u00e9veloppent une saveur \u00e9tonnamment profonde et sucr\u00e9e qui se marie si bien avec l'acidit\u00e9 du levain et l'onctuosit\u00e9 du brie. J'utilise des oignons jaunes normaux.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Brie<\/h3>\n\n\n\n<p>Pour cette recette, je pr\u00e9f\u00e8re un brie au go\u00fbt l\u00e9ger, sinon il serait trop puissant. Si vous voulez manger la focaccia un samedi, par exemple, vous devrez nourrir votre levain le jeudi soir.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">La nuit pr\u00e9c\u00e9dente<\/h3>\n\n\n\n<p>Nourrissez votre levain. J'aime nourrir la mienne au moins avec un rapport 1:3:3 (par exemple, 20 g de levure, 60 g d'eau, 60 g de farine).<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Journ\u00e9e de la p\u00e2te<\/h3>\n\n\n\n<p>M\u00e9langer la levure, l'eau, la farine et le sel jusqu'\u00e0 obtention d'un m\u00e9lange homog\u00e8ne. Couvrir et laisser reposer pendant 30 minutes.<\/p>\n\n\n\n<p>Effectuer un \u00e9tirement et un pliage (voir ma vid\u00e9o <a href=\"https:\/\/youtu.be\/itT8oZmi3B4?si=i847xIpXgFmyei8H&amp;t=154\">ici<\/a> qui vous montrera comment faire les \u00e9tirements et les plis). Couvrez et laissez reposer pendant 30 minutes.<\/p>\n\n\n\n<p>Effectuer 2 s\u00e9ries de plis en spirale \u00e0 30 minutes d'intervalle (cliquez sur <a href=\"https:\/\/youtu.be\/itT8oZmi3B4?si=LzcsYuSR764G_AkG&amp;t=257\">ici<\/a> pour voir comment faire un pliage en spirale). Ne vous inqui\u00e9tez pas si elle ne couvre pas tout le fond, elle s'\u00e9talera lors de la deuxi\u00e8me lev\u00e9e.<\/p>\n\n\n\n<p>Laisser reposer dans un endroit chaud jusqu'\u00e0 ce que la p\u00e2te ait doubl\u00e9 de volume et que de grosses bulles apparaissent \u00e0 la surface, soit environ 1 \u00e0 2 heures.<\/p>\n\n\n\n<p>Pendant que la focaccia gonfle, \u00e9mincer l'oignon et le faire revenir \u00e0 feu doux dans un peu d'huile d'olive jusqu'\u00e0 ce qu'il soit dor\u00e9 et caram\u00e9lis\u00e9.<\/p>\n\n\n\n<p>Pr\u00e9chauffer le four \u00e0 220\u00b0C.<\/p>\n\n\n\n<p>Versez un filet d'huile d'olive suppl\u00e9mentaire et creusez des fossettes dans la focaccia en enfon\u00e7ant vos doigts dans la p\u00e2te.
