Bien que cela soit absolument d\u00e9licieux, je dois dire que cette version sal\u00e9e du scone traditionnel est ma pr\u00e9f\u00e9r\u00e9e. J'ajoute de la levure chimique, il n'est donc pas n\u00e9cessaire d'utiliser de la farine auto-lissante. Si vous d\u00e9cidez d'utiliser de la farine auto-lissante, vous devrez r\u00e9duire la quantit\u00e9 de levure chimique \u00e0 1\/2 cuill\u00e8re \u00e0 caf\u00e9.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Poudre \u00e0 lever<\/h3>\n\n\n\n<p>Comme nous n'utilisons pas de levain pour faire lever les scones, vous devrez ajouter de la levure chimique. Celle-ci peut \u00e9galement \u00eatre remplac\u00e9e par du bicarbonate de soude.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Beurre<\/h3>\n\n\n\n<p>Le beurre est un ingr\u00e9dient essentiel de toute recette de scone. Les \"d\u00e9chets\" de levain sont ce qui reste pendant le processus d'alimentation de votre levain. Comme nous n'avons besoin que d'une petite quantit\u00e9 de levain, nous devons souvent jeter le reste. Beaucoup d'entre nous conservent ce reste au r\u00e9frig\u00e9rateur comme plan de secours, en cas de probl\u00e8me avec notre levain, ou pour l'utiliser dans des recettes \u00e0 base de restes comme celle-ci.<\/p>\n\n\n\n<p>Le levain contient de la levure sauvage, qui permet au pain au levain de lever. Si vous souhaitez faire du pain au levain, j'ai une excellente recette pour les d\u00e9butants.&nbsp;<a href=\"https:\/\/candleinthekitchen.com\/simple-wholewheat-french-flour-sourdough-bread\/\">ici<\/a>.<\/p>\n\n\n\n<p>\u00c9tant donn\u00e9 que le levain utilis\u00e9 dans cette recette n'est probablement pas actif (il n'a pas \u00e9t\u00e9 nourri au pr\u00e9alable), nous ne comptons pas sur lui pour aider la p\u00e2te \u00e0 lever. Toutefois, si vous utilisez du levain pour des raisons de sant\u00e9, vous pouvez laisser les scones non cuits fermenter au r\u00e9frig\u00e9rateur pendant quelques heures avant de les faire cuire. Cela permettra aux r\u00e9sidus de levain de commencer \u00e0 fermenter le gluten de la p\u00e2te et de la rendre plus digeste. Vous devrez peut-\u00eatre augmenter le temps de cuisson, car la p\u00e2te sera froide \u00e0 la sortie du r\u00e9frig\u00e9rateur.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ar\u00f4mes utilis\u00e9s pour les scones au levain et au fromage<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Fromage<\/h3>\n\n\n\n<p>En tant que Britannique, je suis peut-\u00eatre un peu partiale, mais je trouve que le meilleur fromage \u00e0 utiliser en p\u00e2tisserie est le cheddar. Il fond g\u00e9n\u00e9ralement bien et donne aux scones ce d\u00e9licieux go\u00fbt de fromage que nous recherchons.<\/p>\n\n\n\n<p>D'autres options sont le Comt\u00e9 ou le Gruy\u00e8re. Pour une raison ou une autre, la moutarde fait toujours ressortir la saveur du fromage. Nous l'utilisons dans ces scones et surtout dans les sauces au fromage. J'aime aussi l'\u00e9taler sur la p\u00e2te quand je fais cette <a href=\"https:\/\/candleinthekitchen.com\/gluten-free-quiche-recipe-a-quiche-lorraine-everyone-can-enjoy\/\">pr\u00e9paration de quiche<\/a> pour renforcer encore la saveur du fromage.<\/p>\n\n\n\n<p>Vous pouvez remplacer la moutarde par de la moutarde en poudre si vous en avez - la saveur sera encore plus forte. Attention, vous n'aurez pas besoin d'autant de moutarde en poudre que de moutarde - 1 cuill\u00e8re \u00e0 soupe sera trop ! Malheureusement, je ne trouve pas de moutarde en poudre en France et je n'ai donc pas test\u00e9 la quantit\u00e9 n\u00e9cessaire.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Herbes de Provence<\/h3>\n\n\n\n<p>Depuis que j'ai achet\u00e9 un grand pot de ces merveilleuses herbes chez Costco, je les utilise dans de nombreux plats diff\u00e9rents ! Je pense qu'elles se marient tr\u00e8s bien avec ces scones au fromage, apportant une autre dimension de saveur. M\u00e9langer la farine, la levure, le sel, le beurre et les herbes dans votre batteur sur socle \u00e0 l'aide de la palette, ou en frottant le m\u00e9lange du bout des doigts.<\/p>\n\n\n\n<p>Pendant ce temps, faire chauffer le lait jusqu'\u00e0 ce qu'il soit ti\u00e8de et y ajouter le vinaigre de fa\u00e7on \u00e0 ce que le lait caille.<\/p>\n\n\n\n<p>Lorsque le m\u00e9lange de farine et de beurre ressemble \u00e0 de la chapelure, ajouter le m\u00e9lange de lait, les restes de levain, la moutarde et 100 g de fromage (garder le reste du fromage pour garnir les scones). M\u00e9langer jusqu'\u00e0 ce que la p\u00e2te se rassemble \u00e0 peine. Veillez \u00e0 ne pas trop m\u00e9langer, car cela rendrait les scones durs. La p\u00e2te sera assez s\u00e8che, c'est normal.<\/p>\n\n\n\n<p>Retourner la p\u00e2te sur une surface l\u00e9g\u00e8rement farin\u00e9e et lui donner la forme d'un disque rond d'environ 2,5 cm d'\u00e9paisseur. \u00c0 l'aide d'un grattoir, couper le disque en 8 parties \u00e9gales.<\/p>\n\n\n\n<p>Placer les scones sur la plaque de cuisson chaude, les badigeonner de lait et les saupoudrer de fromage. Cuire au four pr\u00e9chauff\u00e9 pendant environ 18 minutes.<\/p>\n\n\n\n<p>Servir chaud avec du beurre sal\u00e9, seul, ou avec un bon bol de soupe !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Comment conserver les scones au levain et au fromage<\/h2>\n\n\n\n<p>Ces scones au fromage se conservent dans un r\u00e9cipient herm\u00e9tique pendant 1 \u00e0 2 jours \u00e0 temp\u00e9rature ambiante. J'aime rafra\u00eechir mes scones avant de les servir en les r\u00e9chauffant au four pendant 5-10 minutes \u00e0 160\u00b0C.<\/p>\n\n\n\n<p>Les Sourdough Discard Cheese Scones se cong\u00e8lent \u00e9galement tr\u00e8s bien. Lorsque je m'ennuie avec le pain, c'est ce que je fais ! <\/p>\n\n\n\n<p>Je les r\u00e9chauffe, je les coupe en deux et je les enduis de beurre dor\u00e9 qui commence imm\u00e9diatement \u00e0 fondre - c'est d\u00e9licieux ! <\/p>\n\n\n\n<p>Une autre excellente fa\u00e7on de les servir est de les accompagner de jambon et de salade. Je ne pense pas qu'ils feraient un bon r\u00e9cipient pour un sandwich car ils sont assez friables, mais avec du jambon et de la salade \u00e0 c\u00f4t\u00e9, ils sont parfaits !<\/p>\n\n\n\n<p>Une autre fa\u00e7on d\u00e9licieuse de servir ces scones au fromage au levain serait de les servir en accompagnement d'un rago\u00fbt riche. M\u00e9langer jusqu'\u00e0 ce que la p\u00e2te se rassemble \u00e0 peine. Veillez \u00e0 ne pas trop m\u00e9langer, car cela rendrait les scones durs.
