Ce n'est pas aussi difficile qu'il n'y para\u00eet ! Mon moulin \u00e0 grains de comptoir fait tout le travail pour moi et n'ajoute qu'une minute ou deux \u00e0 l'ensemble du processus. Pour moi, cela en vaut la peine car mes gar\u00e7ons, qui souffrent d'une allergie au gluten depuis leur naissance, peuvent d\u00e9sormais manger du bl\u00e9 fra\u00eechement moulu ! Quelle joie de les voir d\u00e9guster les m\u00eames muffins que le reste de la famille !<\/p>\n\n\n\n<p>J'aime utiliser du petit \u00e9peautre pour r\u00e9aliser cette recette, mais elle fonctionne \u00e9galement avec du bl\u00e9 moderne. Je p\u00e8se simplement les baies de bl\u00e9 ou de petit \u00e9peautre avant de les moudre et je les mouds directement dans le bol que j'utiliserai pour pr\u00e9parer les muffins. C'est facile !<\/p>\n\n\n\n<p>Vous pouvez \u00e9galement r\u00e9aliser cette recette avec de la farine compl\u00e8te achet\u00e9e dans le commerce. Je vous recommande vivement d'acheter de la farine biologique et de vous approvisionner localement si vous le pouvez.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Levain<\/h3>\n\n\n\n<p>En plus de moudre ma propre farine, j'aime aussi faire fermenter ma p\u00e2te \u00e0 muffins pour d\u00e9composer le plus de gluten possible. Pour ce faire, j'ai besoin d'un levain. Pour cette recette, vous pouvez utiliser un levain actif ou des restes de levain, selon ce que vous avez sous la main.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Miel<\/h3>\n\n\n\n<p>J'adore utiliser le miel comme \u00e9dulcorant. Les \u0153ufs que je trouve ici en France sont assez gros.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cannelle<\/h3>\n\n\n\n<p>J'aime ajouter de la cannelle \u00e0 la p\u00e2te \u00e0 muffins pour lui donner une touche de saveur suppl\u00e9mentaire. C'est tout \u00e0 fait facultatif, vous pouvez l'omettre si vous pr\u00e9f\u00e9rez, les muffins n'en seront pas moins d\u00e9licieux !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Fraises<\/h3>\n\n\n\n<p>J'utilise des fraises surgel\u00e9es pour cette recette car elles sont g\u00e9n\u00e9ralement plus abordables que les fraises fra\u00eeches. J'imagine qu'on peut aussi utiliser des fraises fra\u00eeches, mais je n'ai jamais essay\u00e9. Si vous utilisez des fruits frais dans des muffins, dites-moi si cela fonctionne bien.<\/p>\n\n\n\n<p>Je d\u00e9cong\u00e8le les fraises, je les coupe en d\u00e9s et je les ajoute directement \u00e0 la p\u00e2te. Si vous ne moulez pas votre farine, mesurez la farine directement dans le bol.<\/p>\n\n\n\n<p>Ajouter les autres ingr\u00e9dients secs \u00e0 la farine (levure, sel, \u00e9pices) et m\u00e9langer le tout.<\/p>\n\n\n\n<p>Ajouter ensuite tous les autres ingr\u00e9dients, sauf les fraises, et bien m\u00e9langer. La p\u00e2te sera assez molle, c'est normal.<\/p>\n\n\n\n<p>Ajouter les fraises coup\u00e9es en morceaux et les m\u00e9langer \u00e0 la p\u00e2te.<\/p>\n\n\n\n<p>Vous pouvez \u00e9galement mettre tous vos ingr\u00e9dients dans un robot ou un mixeur et les m\u00e9langer jusqu'\u00e0 ce qu'ils soient combin\u00e9s. Vous obtiendrez ainsi une texture plus lisse et les fraises seront r\u00e9duites en pur\u00e9e dans la p\u00e2te.<\/p>\n\n\n\n<p>Si vous souhaitez faire fermenter votre p\u00e2te, couvrez le bol et mettez-le au r\u00e9frig\u00e9rateur pendant au moins 1 heure ou jusqu'\u00e0 24 heures. J'aime utiliser une grande cuill\u00e8re \u00e0 biscuits pour ce faire.<\/p>\n\n\n\n<p>Faire cuire au four pendant 20-25 minutes. V\u00e9rifier les muffins au bout de 20 minutes. Les muffins qui ont ferment\u00e9 longtemps au r\u00e9frig\u00e9rateur peuvent n\u00e9cessiter un temps de cuisson l\u00e9g\u00e8rement plus long. J'aime v\u00e9rifier que mes muffins sont cuits en ins\u00e9rant une brochette dans un muffin. Si elle ressort propre, les muffins sont cuits.<\/p>\n\n\n\n<p>Laisser refroidir sur une grille. D\u00e9guster ti\u00e8de ou froid avec une tasse de th\u00e9 ou de caf\u00e9 fumant !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Comment conserver les muffins aux fraises au levain sans produits laitiers ?<\/h2>\n\n\n\n<p>Ces muffins se conservent 3 \u00e0 4 jours \u00e0 temp\u00e9rature ambiante dans une bo\u00eete herm\u00e9tique. Si votre cuisine est chaude, en \u00e9t\u00e9 par exemple, ils ne se conserveront pas aussi longtemps. <\/p>\n\n\n\n<p>Cependant, ces muffins se cong\u00e8lent tr\u00e8s bien, alors si vous pensez que votre famille ne les mangera pas tous avant qu'ils n'expirent, mettez-les dans un sac \u00e0 fermeture \u00e9clair au cong\u00e9lateur et vous aurez des collations pr\u00eates \u00e0 emporter chaque fois que vous en aurez besoin. Il vous suffira de les d\u00e9congeler sur le comptoir de la cuisine pendant 1 \u00e0 2 heures lorsque vous serez pr\u00eat \u00e0 les manger.
