Bien que nous aimions tous le pain au levain ici, faire la m\u00eame miche \u00e0 chaque fois peut devenir tr\u00e8s ennuyeux ! Ce pain aux fruits au levain me permet de sortir de la routine et d'appr\u00e9cier quelque chose d'un peu diff\u00e9rent.<\/p>\n\n\n\n<p>Les noix, les dattes et les abricots offrent un \u00e9quilibre parfait qui se marient si bien avec un <a href=\"https:\/\/candleinthekitchen.com\/simple-wholewheat-french-flour-sourdough-bread\/\">pain de bl\u00e9 entier au levain<\/a>. Pour plus de nutrition et de saveur, j'aime utiliser de la <a href=\"https:\/\/candleinthekitchen.com\/whole-wheat-artisan-sourdough-bread-recipe\/\">farine fra\u00eechement moulue pour faire du pain<\/a>.<\/p>\n\n\n\n<p>Nous adorons manger ce pain aux fruits et aux noix au levain grill\u00e9 avec du beurre sal\u00e9 pour un petit-d\u00e9jeuner douillet et rassasiant. Nous le d\u00e9gustons \u00e9galement avec du fromage, en guise d'en-cas ou d'ap\u00e9ritif. Ici, en France, je ne peux trouver que du bl\u00e9 tendre et, bien que je ne connaisse pas la vari\u00e9t\u00e9 exacte, je pense qu'il s'agit de bl\u00e9 rouge. Si vous utilisez une autre vari\u00e9t\u00e9 de bl\u00e9, vous devrez probablement modifier la teneur en eau, car certains bl\u00e9s absorbent plus d'eau que d'autres. Plus la teneur en gluten de votre bl\u00e9 est faible, moins vous aurez besoin d'eau. Il vous faudra proc\u00e9der par essais et erreurs pour trouver la quantit\u00e9 exacte d'eau n\u00e9cessaire pour le bl\u00e9 que vous utilisez.<\/p>\n\n\n\n<p>Si vous utilisez de la farine de bl\u00e9 entier achet\u00e9e dans le commerce, je vous recommande de commencer par 370 ml d'eau et d'en ajouter progressivement si vous avez l'impression que la p\u00e2te est trop ferme ou s'il reste beaucoup de farine s\u00e8che lorsque vous m\u00e9langez les ingr\u00e9dients.<\/p>\n<\/details>\n\n\n\n<details class=\"wp-block-details is-layout-flow wp-block-details-is-layout-flow\"><summary>Eau filtr\u00e9e<\/summary>\n<p>Il est tr\u00e8s important d'utiliser de l'eau filtr\u00e9e ou non chlor\u00e9e dans cette recette, car le chlore emp\u00eache les bact\u00e9ries de se d\u00e9velopper. Les bact\u00e9ries du levain doivent se d\u00e9velopper pour que la p\u00e2te fermente et l\u00e8ve !<\/p>\n<\/details>\n\n\n\n<details class=\"wp-block-details is-layout-flow wp-block-details-is-layout-flow\"><summary>D\u00e9marrage actif du levain<\/summary>\n<p>J'aime nourrir mon levain la veille avec une tr\u00e8s petite quantit\u00e9 de levain et une grande quantit\u00e9 de farine et d'eau (par exemple, 25 g de levain, 100 g de farine, 100 g d'eau filtr\u00e9e). Cela me permet d'obtenir un levain tr\u00e8s fort, pr\u00eat \u00e0 faire du pain le matin. Je pr\u00e9f\u00e8re utiliser du sel de mer en flocons, car il contient plus de min\u00e9raux essentiels \u00e0 notre sant\u00e9. Je pr\u00e9f\u00e8re \u00e9viter le sel de table raffin\u00e9 dans la mesure du possible.<\/p>\n<\/details>\n\n\n\n<details class=\"wp-block-details is-layout-flow wp-block-details-is-layout-flow\"><summary>Fruits secs et noix<\/summary>\n<p>J'aime utiliser des noix, des dattes et des abricots dans cette recette, car leurs saveurs s'\u00e9quilibrent si bien. D'autres possibilit\u00e9s sont les noix de p\u00e9can, les raisins secs ou les figues. <\/p>\n\n\n\n<p>Il est \u00e9galement possible d'utiliser des noisettes ou des amandes, mais il faut savoir que ces noix sont beaucoup plus dures et, \u00e0 mon avis, ne sont pas tr\u00e8s agr\u00e9ables dans un pain.<\/p>\n\n\n\n<p>Veillez \u00e0 couper les fruits et les noix pour qu'ils soient r\u00e9partis uniform\u00e9ment dans le pain.<\/p>\n<\/details>\n\n\n\n<h2 class=\"wp-block-heading\">Comment pr\u00e9parer la recette du pain aux fruits au levain avec noix, dattes et abricots ?<\/h2>\n\n\n\n<p>Il ne s'agit pas d'une recette pour d\u00e9butants. Je n'entrerai pas ici dans les d\u00e9tails de la fabrication du pain au levain. Casser les noix en 4 morceaux et les faire griller doucement dans une po\u00eale pendant environ 5 minutes ou jusqu'\u00e0 ce que l'on sente l'odeur des noix grill\u00e9es. Laisser refroidir pendant au moins 15 minutes.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Plastifiez et ajoutez les fruits et les noix : <\/h3>\n\n\n\n<p>D\u00e9poser la p\u00e2te sur une surface humide et l'\u00e9tirer en un rectangle. R\u00e9partir uniform\u00e9ment les fruits et les noix sur la p\u00e2te. Pliez le tiers sup\u00e9rieur de la p\u00e2te au milieu, r\u00e9p\u00e9tez l'op\u00e9ration avec le tiers inf\u00e9rieur, puis le tiers droit et le tiers gauche. Fa\u00e7onner un batard et le placer dans un banneton tapiss\u00e9.
