La saveur suppl\u00e9mentaire que les graines apportent au pain est incroyable, et le fait qu'elles soient grill\u00e9es avant d'\u00eatre ajout\u00e9es au pain accentue encore cette saveur.<\/p>\n\n\n\n<p>Si, comme moi, vous \u00eates originaire du Royaume-Uni, vous vous souvenez peut-\u00eatre du Tiger Bread ? Il s'agit d'un pain blanc que l'on badigeonne d'huile de s\u00e9same avant de le cuire. Cela donne \u00e0 la miche une finition int\u00e9ressante qui doit \u00e9videmment ressembler un peu \u00e0 un tigre ! J'ai toujours aim\u00e9 le go\u00fbt de ce pain avec la saveur du s\u00e9same et je pense que c'est aussi pour cela que j'aime tant cette recette. Je vous sugg\u00e8re de consulter mon <a href=\"https:\/\/candleinthekitchen.com\/simple-wholewheat-french-flour-sourdough-bread\/\">Pain simple au levain et \u00e0 la farine compl\u00e8te fran\u00e7aise<\/a>qui est id\u00e9al pour les d\u00e9butants et qui d\u00e9crit toutes les \u00e9tapes en d\u00e9tail.<\/p>\n\n\n\n<p>Le levain est une m\u00e9thode de fabrication du pain dans laquelle la farine et l'eau sont ferment\u00e9es par un ferment actif, cr\u00e9ant ainsi des bulles d'air qui permettent au pain de lever. Cette fermentation rend le pain plus digeste. Certaines personnes sensibles au gluten peuvent manger du pain au levain mais pas du pain lev\u00e9 \u00e0 la levure. Elle am\u00e9liore aussi consid\u00e9rablement le go\u00fbt du pain. Ce qu'il faut retenir, c'est que la farine fran\u00e7aise supporte moins d'eau que la farine britannique ou am\u00e9ricaine, il est donc important d'adapter votre recette en cons\u00e9quence. Pour ce pain fran\u00e7ais au levain multi-c\u00e9r\u00e9ales, j'ai utilis\u00e9 comme base ma recette de levain complet simple, qui utilise de la farine T110. <\/p>\n\n\n\n<p>La farine T110 n'est pas de la farine compl\u00e8te 100%, le go\u00fbt reste donc l\u00e9ger, de m\u00eame que la couleur. Si vous d\u00e9cidez d'utiliser un autre type de farine, vous devrez adapter la teneur en eau en cons\u00e9quence. Cette quantit\u00e9 d'eau convient \u00e0 cette farine particuli\u00e8re dont la teneur en prot\u00e9ines est de 11%.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Eau chaude<\/h3>\n\n\n\n<p>Rien de sp\u00e9cial ici, j'utilise simplement l'eau du robinet \ud83d\ude09<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">D\u00e9marrage actif<\/h3>\n\n\n\n<p>Pour faire n'importe quel type de pain au levain, vous aurez besoin d'un ferment actif. J'esp\u00e8re avoir bient\u00f4t un tutoriel ici pour vous montrer comment en fabriquer un, mais en attendant, je vous sugg\u00e8re d'utiliser <a href=\"https:\/\/www.theclevercarrot.com\/2019\/03\/beginner-sourdough-starter-recipe\/\">cet article<\/a>.<\/p>\n\n\n\n<p>Je nourris g\u00e9n\u00e9ralement mon levain 1:2:2 (100 g de levain, 200 g de farine, 200 g d'eau) la veille pour qu'il soit pr\u00eat \u00e0 faire du pain le matin.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Sel<\/h3>\n\n\n\n<p>C'est un ingr\u00e9dient essentiel, sans lequel votre pain n'aura pas de go\u00fbt. Cela semble beaucoup, mais croyez-moi, chaque gramme est n\u00e9cessaire. Utilisez du sel de mer de bonne qualit\u00e9 si vous pouvez vous en procurer.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Graines<\/h3>\n\n\n\n<p>J'aime utiliser les graines de chia, de lin, de s\u00e9same et de tournesol pour leurs diff\u00e9rents profils de saveurs et leur valeur nutritionnelle ajout\u00e9e. Laissez lever dans un endroit chaud jusqu'\u00e0 ce que vous soyez pr\u00eat \u00e0 cuire le lendemain matin.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">M\u00e9langer les ingr\u00e9dients<\/h3>\n\n\n\n<p>La premi\u00e8re \u00e9tape consiste \u00e0 m\u00e9langer tous les ingr\u00e9dients, \u00e0 l'exception des graines. Mettez la levure, l'eau, la farine et le sel dans un bol et utilisez vos mains ou un crochet \u00e0 p\u00e2tisserie pour les m\u00e9langer jusqu'\u00e0 ce qu'ils forment une p\u00e2te hirsute. <\/p>\n\n\n\n<p>Sinon, et c'est en fait ce que je fais le plus souvent, vous pouvez mettre les ingr\u00e9dients dans un batteur sur socle avec le crochet \u00e0 p\u00e2te et m\u00e9langer \u00e0 faible vitesse pendant environ 8 minutes. J'aime proc\u00e9der de cette mani\u00e8re, car je trouve que cela aide vraiment \u00e0 d\u00e9velopper le gluten.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Griller les graines<\/h3>\n\n\n\n<p>Dans une casserole \u00e0 fond \u00e9pais, ajoutez toutes les graines (chia, lin, tournesol et s\u00e9same) et laissez-les griller \u00e0 feu moyen jusqu'\u00e0 ce que vous commenciez \u00e0 sentir l'odeur des graines (l'odeur est incroyable !). Remuez de temps en temps et veillez \u00e0 ne pas br\u00fbler les graines. Une fois qu'elles commencent \u00e0 brunir, elles br\u00fblent tr\u00e8s rapidement.<\/p>\n\n\n\n<p>Retirez-les du feu et laissez-les refroidir jusqu'\u00e0 ce que vous soyez pr\u00eat \u00e0 les ajouter \u00e0 votre pain.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u00c9tirer et plier<\/h3>\n\n\n\n<p>Apr\u00e8s avoir m\u00e9lang\u00e9 les ingr\u00e9dients du pain, laisser reposer le bol, couvert, sur le plan de travail pendant environ 30 minutes.<\/p>\n\n\n\n<p>Effectuez ensuite une s\u00e9rie d'\u00e9tirements et de pliages. Cela permet de d\u00e9velopper davantage le gluten et est plus facile \u00e0 r\u00e9aliser que les plis en spirale \u00e0 ce stade o\u00f9 la p\u00e2te est encore tr\u00e8s collante.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Laminer et ajouter les graines<\/h3>\n\n\n\n<p>C'est \u00e0 ce moment-l\u00e0 que j'ajoute les graines \u00e0 la p\u00e2te. J'utilise une technique particuli\u00e8re, le laminage, qui a deux objectifs : r\u00e9partir uniform\u00e9ment les graines dans la p\u00e2te et renforcer cette derni\u00e8re.<\/p>\n\n\n\n<p>Pour ce faire, vous devez retirer votre p\u00e2te du bol et la placer sur une surface propre et l\u00e9g\u00e8rement humide. Vous devez ensuite \u00e9tirer votre p\u00e2te sur la surface pour lui donner une forme rectangulaire, en veillant \u00e0 ne pas faire de trous. Si vous souhaitez voir le processus, consultez le site suivant <a href=\"https:\/\/www.youtube.com\/watch?v=7Nztji3srjQ\">cette vid\u00e9o<\/a>.<\/p>\n\n\n\n<p>Saupoudrez uniform\u00e9ment les graines grill\u00e9es et refroidies sur le rectangle de p\u00e2te, puis, \u00e0 l'aide d'un grattoir, rabattez le tiers sup\u00e9rieur de la p\u00e2te vers le milieu. R\u00e9p\u00e9tez l'op\u00e9ration avec le tiers inf\u00e9rieur. Vous devez maintenant obtenir un rectangle long et fin. Maintenant, repliez le tiers gauche du rectangle vers le milieu, puis le tiers droit. Vous devriez avoir une bobine de p\u00e2te au milieu de la surface de travail que vous pouvez maintenant placer dans un bol propre, pr\u00eat pour les plis de la bobine.<\/p>\n\n\n\n<p>J'aime bien faire les ajouts \u00e0 ce stade, car ils seront r\u00e9partis uniform\u00e9ment dans le pain pendant le processus de pliage en spirale.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Pliages en rouleau<\/h3>\n\n\n\n<p>Apr\u00e8s que votre p\u00e2te a repos\u00e9 pendant 30 minutes, faites la premi\u00e8re s\u00e9rie de plis en spirale. Pour ce faire, soulevez la p\u00e2te au milieu et \u00e9tirez-la vers le haut. R\u00e9p\u00e9tez cette op\u00e9ration jusqu'\u00e0 ce que toute la p\u00e2te se soit d\u00e9tach\u00e9e de la paroi du bol. Tournez le bol \u00e0 180\u00b0 et r\u00e9p\u00e9tez l'op\u00e9ration. Ensuite, tournez le bol \u00e0 90\u00b0 et r\u00e9p\u00e9tez l'op\u00e9ration, puis \u00e0 180\u00b0 et r\u00e9p\u00e9tez l'op\u00e9ration. La p\u00e2te doit \u00eatre bien enroul\u00e9e au milieu du bol.<\/p>\n\n\n\n<p>Ces plis doivent \u00eatre r\u00e9p\u00e9t\u00e9s deux fois de plus \u00e0 des intervalles de 30 minutes.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Fermentation en vrac<\/h3>\n\n\n\n<p>Laissez le bol couvert dans un endroit chaud pendant 4 \u00e0 6 heures ou jusqu'\u00e0 ce que la p\u00e2te ait augment\u00e9 de 2\/3. Il ne s'agit pas d'une science exacte, cela peut prendre plus ou moins de temps en fonction de la temp\u00e9rature et de l'humidit\u00e9, et vous devrez apprendre \u00e0 conna\u00eetre l'aspect et la texture de votre p\u00e2te lorsqu'elle est correctement ferment\u00e9e. Comme c'est souvent le cas dans le processus du levain, il y a beaucoup d'essais et d'erreurs \u00e0 faire et il faut apprendre par l'exp\u00e9rience. Cependant, il est extr\u00eamement rare de se retrouver avec un pain immangeable ! S'il est ferment\u00e9 trop longtemps, ou pas assez longtemps, il ne l\u00e8vera pas correctement, mais vous pourrez toujours le manger, m\u00eame s'il s'agit de pain perdu ou de pudding au pain et au beurre !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Mise en forme<\/h3>\n\n\n\n<p>Selon la forme de panier banneton que vous avez choisie, fa\u00e7onnez votre pain soit en boule, soit en ovale (batard) en utilisant la m\u00e9thode de votre choix. Placez la p\u00e2te dans un banneton tapiss\u00e9 et farin\u00e9, cousez les coutures si vous le souhaitez.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Fermentation \u00e0 froid<\/h3>\n\n\n\n<p>Placez le banneton au r\u00e9frig\u00e9rateur et laissez-le fermenter \u00e0 froid pendant au moins 8 heures, voire toute la nuit, ou jusqu'\u00e0 ce que vous soyez pr\u00eat \u00e0 le cuire.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cuisson<\/h3>\n\n\n\n<p>Allumez votre four \u00e0 240\u00b0\/250\u00b0C (ventilateur). Placez une casserole vide et peu profonde dans le fond du four pour la faire chauffer. Faites bouillir une bouilloire remplie d'eau.<\/p>\n\n\n\n<p>Lorsque le four est \u00e0 temp\u00e9rature, sortir la p\u00e2te du r\u00e9frig\u00e9rateur et la r\u00e9partir sur une plaque \u00e0 p\u00e2tisserie recouverte d'un papier sulfuris\u00e9.<\/p>\n\n\n\n<p>Faites des entailles comme vous le souhaitez, au moins une entaille profonde, l\u00e9g\u00e8rement excentr\u00e9e, pour aider le pain \u00e0 \u00e9vacuer la vapeur et \u00e0 garder sa forme. Vous pouvez \u00e9galement r\u00e9aliser des rainures d\u00e9coratives si vous le souhaitez.<\/p>\n\n\n\n<p>Baisser le four \u00e0 230\u00b0C et enfourner le pain. Verser de l'eau bouillante dans la casserole peu profonde pour cr\u00e9er de la vapeur.<\/p>\n\n\n\n<p>Faire cuire pendant 20 minutes.
