J'ajoute de la levure chimique, il n'est donc pas n\u00e9cessaire d'utiliser de la farine auto-lissante. Si vous d\u00e9cidez d'utiliser de la farine auto-lissante, vous devrez r\u00e9duire la quantit\u00e9 de levure chimique \u00e0 1\/2 cuill\u00e8re \u00e0 caf\u00e9.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Poudre \u00e0 lever<\/h3>\n\n\n\n<p>Comme nous n'utilisons pas de levain pour faire lever les scones, vous devrez ajouter de la levure chimique. Celle-ci peut \u00e9galement \u00eatre remplac\u00e9e par du bicarbonate de soude.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Sucre<\/h3>\n\n\n\n<p>Cette recette ne n\u00e9cessite qu'une petite quantit\u00e9 de sucre, mais ne l'omettez pas ! Il est tout \u00e0 fait n\u00e9cessaire et permet de faire ressortir toutes les autres saveurs.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u00c9corce de citron<\/h3>\n\n\n\n<p>C'est ce qui donnera aux scones leur d\u00e9licieux et subtil go\u00fbt de citron. Un peu suffit, le zeste d'un citron devrait donc suffire.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Beurre<\/h3>\n\n\n\n<p>Le beurre est un ingr\u00e9dient essentiel de toute recette de scone. Pour la rendre sans produits laitiers, vous pouvez utiliser un substitut du beurre sans produits laitiers, \u00e0 condition qu'il durcisse \u00e0 froid. Je trouve que la margarine molle ne fonctionne pas aussi bien.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Levain<\/h3>\n\n\n\n<p>Il s'agit de l'ingr\u00e9dient central du scone, qui lui conf\u00e8re toute sa saveur. Les \"d\u00e9chets\" de levain sont ce qui reste pendant le processus d'alimentation de votre levain. Comme nous n'avons besoin que d'une petite quantit\u00e9 de levain, nous devons souvent jeter le reste. Beaucoup d'entre nous conservent ce reste au r\u00e9frig\u00e9rateur comme plan de secours, en cas de probl\u00e8me avec notre levain, ou pour l'utiliser dans des recettes \u00e0 base de restes comme celle-ci.<\/p>\n\n\n\n<p>Le levain contient de la levure sauvage, qui permet au pain au levain de lever. Si vous souhaitez faire du pain au levain, j'ai une excellente recette pour les d\u00e9butants. <a href=\"https:\/\/candleinthekitchen.com\/simple-wholewheat-french-flour-sourdough-bread\/\">ici<\/a>. <\/p>\n\n\n\n<p>\u00c9tant donn\u00e9 que le levain utilis\u00e9 dans cette recette n'est probablement pas actif (il n'a pas \u00e9t\u00e9 nourri au pr\u00e9alable), nous ne comptons pas sur lui pour aider la p\u00e2te \u00e0 lever. Toutefois, si vous utilisez du levain pour des raisons de sant\u00e9, vous pouvez laisser les scones non cuits fermenter au r\u00e9frig\u00e9rateur pendant quelques heures avant de les faire cuire. Cela permettra aux r\u00e9sidus de levain de commencer \u00e0 fermenter le gluten de la p\u00e2te et de la rendre plus digeste. Il est important de ne pas trop m\u00e9langer la p\u00e2te car elle deviendrait dure. La p\u00e2te sera assez humide, c'est normal.<\/p>\n\n\n\n<p>D\u00e9poser la p\u00e2te sur une surface de travail propre et bien farin\u00e9e. Veillez \u00e0 ce que la p\u00e2te soit bien recouverte de farine afin qu'elle ne colle pas \u00e0 vos mains. Former un cercle \u00e9pais (environ 2,5 cm d'\u00e9paisseur) et le tapoter pour que la surface soit uniforme.<\/p>\n\n\n\n<p>\u00c0 l'aide d'un grattoir ou d'un grand couteau, couper la p\u00e2te en huit parties triangulaires \u00e9gales. <\/p>\n\n\n\n<p>Battre un \u0153uf et ajouter un peu d'eau pour faire une dorure d'\u0153uf.<\/p>\n\n\n\n<p>Retirez la plaque chaude du four et placez les scones non cuits uniform\u00e9ment sur la plaque. M\u00e9langez bien jusqu'\u00e0 l'obtention d'un m\u00e9lange homog\u00e8ne. Le gla\u00e7age doit tomber lentement de la cuill\u00e8re. S'il est trop \u00e9pais, ajoutez un peu plus de jus de citron (environ 1 cuill\u00e8re \u00e0 soupe). Faites tr\u00e8s attention, car il est facile d'en ajouter trop et le gla\u00e7age sera trop liquide.<\/p>\n\n\n\n<p>Verser le gla\u00e7age sur les scones et d\u00e9corer avec un peu plus de zeste de citron r\u00e2p\u00e9 si vous le souhaitez.<\/p>\n\n\n\n<p>Servez-les tels quels avec une bonne tasse de th\u00e9, mais vous pouvez aussi les servir avec du beurre ou m\u00eame avec du lemon curd et de la clotted cream (une cr\u00e8me fra\u00eeche \u00e9paisse) !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Conseils pour r\u00e9aliser des scones au levain et au citron parfaits<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Veillez \u00e0 ce que la plaque de cuisson soit chaude. Cela permettra \u00e0 vos scones de prendre un bon d\u00e9part et de bien gonfler. <\/li>\n\n\n\n<li>Assurez-vous que le beurre est bien incorpor\u00e9 \u00e0 la farine. Il ne doit pas y avoir de gros morceaux de beurre, mais le m\u00e9lange d'ingr\u00e9dients secs et de beurre doit ressembler \u00e0 de la chapelure.<\/li>\n\n\n\n<li>Ne pas trop m\u00e9langer la p\u00e2te. Vous obtiendrez un scone dur. Il est normal que la p\u00e2te soit hirsute et ne semble pas bien m\u00e9lang\u00e9e. Quelques secondes dans le batteur sur socle suffisent pour incorporer le lait.<\/li>\n\n\n\n<li>Utilisez beaucoup de farine lorsque vous fa\u00e7onnez la p\u00e2te pour \u00e9viter qu'elle ne colle \u00e0 la surface ou \u00e0 vos mains.<\/li>\n\n\n\n<li>Si vous utilisez le levain pour r\u00e9duire le gluten dans la p\u00e2te, vous pouvez utiliser de la farine d'einkorn ou un autre type de farine \u00e0 faible teneur en gluten pour saupoudrer votre plan de travail.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">Comment servir les scones au levain et au citron avec un gla\u00e7age au citron ?<\/h2>\n\n\n\n<p>J'aime servir ces scones tels quels avec une bonne tasse de th\u00e9, mais vous pouvez les servir avec du beurre ou m\u00eame avec du lemon curd !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Conservation du levain jet\u00e9 Scones au citron<\/h3>\n\n\n\n<p>Les scones sont g\u00e9n\u00e9ralement meilleurs lorsqu'ils sont consomm\u00e9s le jour m\u00eame. Toutefois, si vous ne parvenez pas \u00e0 les manger tous, vous pouvez les conserver dans une bo\u00eete herm\u00e9tique (j'aime utiliser un moule \u00e0 biscuits) pendant plusieurs jours. Vous pouvez les rafra\u00eechir en les passant au four \u00e0 180\u00b0C pendant 5 minutes, mais cela rendra le gla\u00e7age liquide.<\/p>\n\n\n\n<p>Les scones se cong\u00e8lent \u00e9galement tr\u00e8s bien, mais je vous conseille de les congeler avant qu'ils ne soient glac\u00e9s. <\/p>\n\n\n\n<p>Pour les d\u00e9congeler, il suffit de les mettre au four \u00e0 180\u00b0C pendant environ 10 minutes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Que faire si je n'ai pas de levain \u00e0 jeter ?<\/h2>\n\n\n\n<p>Je fais des scones depuis des ann\u00e9es sans levain et, bien que j'appr\u00e9cie vraiment cette recette pour sa saveur suppl\u00e9mentaire et ses bienfaits pour la sant\u00e9, ma recette classique pr\u00e9f\u00e9r\u00e9e de scones est celle de Jane Hornby.
