Homemade Honey Granola with Almonds and Pecans

Ingredients
  

  • 280 g oats
  • 75 g whole almonds
  • 75 g whole pecans
  • 2 tbsp chia seeds
  • 2 tbsp sunflower seeds
  • 4 tbsp honey melted
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Greek yoghurt and fruit to serve

Instructions
 

  • Turn on the oven to 150°C fan. Line a baking tray with baking parchment (this will help when transferring the granola to a jar).
  • First, warm the honey and coconut oil until they are slightly runny. This will help when mixing the ingredients together. You can melt them either in the microwave or in a water bath.
  • Next, place all the dry ingredients in a mixing bowl and then pour the coconut oil, honey and vanilla on top. Mix well with a wooden spoon or danish dough hook until all of the oats, nuts and seeds are coated.
  • Spread the granola mixture onto the baking parchment on the baking tray and bake in the oven for 30 mins until the granola is golden brown.
  • Leave to cool completely before breaking up the granola and storing it in an airtight container.
  • Serve with Greek Yoghurt and fresh and/or dried fruit.
