Sugar Free Cookies with Almond Flour, Honey and Cinnamon

- 3 egg whites
- 300 g almond flour
- 200 g honey
- 1/4 tsp salt
- 2 tsp cinnamon
- Whole almonds to decorate
Preheat the oven to 180°C.
Separate your eggs. Keep your egg yolks in an air tight container in the fridge - they can be used to make mayonnaise or hollandaise sauce for example.
Add the almond flour, honey, salt and cinnamon to the egg whites and mix with a wooden spoon until fully combined.
Make small balls of dough and place them on a baking sheet. You can either make the balls by rolling a spoonful of dough by hand (wetting your hands first will help to prevent the dough sticking). Or, and this is my preferred method, you can make balls with a small cookie dough scoop. I find that if the dough is compacted into the cookie dough scoop, it creates the perfect shape for the cookie. Have a cup of water close by and wet the cookie dough scoop regularly so that the dough does not stick to it.
Press a whole almond into the top of each cookie dough ball, making sure to press it down enough so that it stays in place during baking.
Bake in the preheated oven for 15 minutes until golden brown.
Leave to cool before serving.
Serve with a hot drink as an afternoon snack or as an addition to dessert.
Store in an air-tight container at room temperature for 5-7 days.
