Why These Sourdough Discard Muffins Are Great for Healthy Snacking

As a mom of four, I am always in search of healthy snack ideas for my children. Most of them have a sweet tooth, but I like to make sure that they are not eating too much refined sugar. That is why I especially like these recipes – most use honey or maple syrup instead of sugar, and those do include sugar, only contain a small amount. If you’re looking for more healthy snack ideas, check out this article.

I also enjoy baking seasonally, so I like to change the ingredients in my muffins according to what is in season. In autumn, we love apple muffins, but in the spring we enjoy strawberry muffins more. Keep your eye out as I hope to be adding more muffin recipes with different seasonal flavours to this list as time goes on!

Why Whole Wheat Flour Works So Well in Sourdough Discard Muffins

I love using fresh milled flour in all my baking. It contains so much fibre and a host of other nutrients so I feel really good about giving it to my children. If you can’t get hold of fresh milled flour, you can use store bought whole wheat instead, that will work just as well and still contains a lot more nutritional benefits than white flour.

FAQs

Can I use active sourdough starter instead of discard in these muffin recipes?

Absolutely! The muffin batter is used immediately or fermented in the fridge so the sourdough starter will not make it rise (the rising agent is baking powder in this recipe).

Are these sourdough discard muffins completely dairy free?

Yes, they use oil instead of butter and most contain no milk at all. The Apple Oat Muffins do contain milk, but it is easily substituted with almond milk or another vegan milk alternative.

How should I store sourdough discard muffins?

Store them in an airtight container at room temperature for up to 2 days, or refrigerate for 4–5 days. You can also freeze them for up to 3 months.

Do sourdough discard muffins taste sour?

No, they do not taste sour. The discard adds a mild tang that complements the sweetness, but it’s very subtle.
