Since I moved to France, I have noticed that so many people here make quiche from scratch at least once a week. Since discovering how easy it is to do, I have begun to make my own quiches too.
There are so many reasons why I love to make quiche for my family, but here are just a few:
- It is incredibly versatile and satisfying – we love it for lunch, dinner, packed lunches or even picnics!
- If I need to use up some leftover veggies, meat or cheese, making quiche is a great solution!
- I like to adapt the recipe to suit what I fancy that day, or what is in season.

- I can easily adapt the recipe to suit allergies or intolerances.
Tips for the Best Quiche Recipe
In my opinion, there are a few things that takes a quiche from ordinary to amazing:
- Homemade pastry (check out my sourdough discard pastry crust or my gluten free pastry) – it is easier to make than it sounds, and it really does make all the difference.
- A light but creamy egg filling – I prefer not to use cream so the filling is light but still incredibly satisfying.
- A good balance of ingredients – getting the right amount of veggies, cheese and meat is essential to a flavourful quiche that has good texture.
- Blind baking the pastry – this will help you avoid the dreaded soggy bottom!
- Spreading the base with mustard – this gives the quiche an extra kick of umami flavour that really makes a difference<

What to Serve with Homemade Quiche
Depending on what meal you are serving your quiche for, you might want to try some of these pairings:
- Fresh green salad with apple cidre vinaigrette, or during winter this endive, apple and walnut salad
- Seasonal vegetable soup
- Roasted or steamed veg on the side, or try this roasted veg salad
- Cold potato salad or couscous for picnics, or maybe this roasted veg and quinoa salad
How to Store and Reheat Homemade Quiche
Once your quiche is cooked and cooled, it will keep in the fridge for 3-4 days. You can also freeze it.
