Can You Make a Vinaigrette with Apple Cider Vinegar?
Yes, absolutely, and here’s why it works so well. Apple cider vinegar has a unique flavour that pairs well with many salad combinations. It is very well known for its health properties, and when mixed with well-sourced oils and fresh or dried herbs, it provides an incredibly nutritious addition to any meal.

Apple Cider and Herb Vinaigrette Recipe
This recipe comes together in a matter of minutes and uses ingredients you probably already have to hand. Keep reading to see just how easy it is to make.
Ingredients
- 180 ml oil (see below)
- 60 ml apple cider vinegar
- 1 tbsp mustard
- 1 tsp salt
- 2 tsp dried herbs (or 2 tbsp fresh herbs – see below)
- 1 tsp garlic granules (or 1/2 clove fresh garlic, crushed)

What is the best oil to use?
I am very careful about the oils I use these days, since hearing about some of the extraction processes used to make seed oil. I prefer to use avocado oil, which has a neutral taste, but I also like to use a little bit of pressed rapeseed (canola) oil for its nutrition (it has a good balance of omega-3 and omega-6). However, I only buy organic rapeseed (canola) oil that has been mechanically pressed with no chemical treatment at all. I generally use about 130 ml avocado oil and 50 ml rapeseed (canola oil)
Another possibility would be to use olive oil, but I personally find the flavour too strong for this dressing.
The Best Herbs for Vinaigrette
If you are looking for an especially easy dressing, the very best herbs to use are Herbes de Provence. This has a perfect blend of herbs that goes so well with the taste of apple cider in this dressing.
Other options for dried herbs would be parsley, thyme, rosemary and oregano. I would recommend using rosemary and thyme sparingly, as their flavour is quite strong.
If, on the other hand, you prefer to use fresh herbs, I would recommend finely chopping parsley, chives, oregano and thyme. If you wish, you can add some rosemary, but be careful not to add too much as the flavour can be overpowering.
In my opinion, herbs to avoid would be mint, coriander, lemon balm… as these would give a totally different flavour profile to the salad dressing.

How to Make Apple Cider and Herb Vinaigrette
Place all of the ingredients in an empty 320 ml (or larger) jam jar (or mason jar). Either stir with a teaspoon or fork, or screw on the lid tightly and shake the jar until the dressing is mixed together. I usually start the process off with a spoon and finish by shaking the jar.
You can also make this dressing in a jug or a bowl, using a spoon, fork or small whisk to stir it, but you should transfer it to an air tight container to store it.
You will need to shake the jar before each use.
This will make enough dressing for several meals.
How to store this Herby Apple Cider Vinaigrette
I like to make this amount of vinaigrette at once because I know it will keep well in the fridge and I will be able to use it for several meals.
If you used dried herbs and garlic, you can keep it for 3-4 weeks. However, if you used fresh herbs or garlic (or a mixture), you will only be able to keep it for 5 days at the most.
