I think one of my favourite breakfasts has to be Greek yoghurt with homemade granola and fresh berries. It really sets me up for the day and puts a smile on my face. I feel like I am eating a healthy meal, packed with protein from the yoghurt, nutrients from the nuts and seeds and vitamins from the fruit. And it doesn’t taste like cardboard! It really does taste amazing!

Are you on a gluten free and/or dairy free diet? No worries, this recipe can easily be made gluten free by swapping out the oats for gluten free oats and by serving with a vegan yoghurt.

If you are concerned about the price of these ingredients, I understand! Keep your eye out for special offers and make sure you check out grocery discount store such as Lidl, Aldi as well as Action and Hema here in Europe. I have found organic coconut oil, nuts and seeds that way.

Homemade Honey Granola with Almonds and Pecans Ingredients

Only simple, natural ingredients go into this recipe for maximum health benefits. There are obviously many variations that can be made, but I really enjoy this particular combination.

  • 280g oats
  • 75g whole almonds
  • 75g whole pecans
  • 2 tbsp chia seeds
  • 2 tbsp sunflower seeds
  • 4 tbsp honey, melted
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Greek yoghurt and fruit to serve

Oats

These are obviously the centre piece, as with most granolas.

Oats are incredibly nutritious. They contain protein, fibre, several vitamins and minerals that are essential to our diet. That makes me feel even better about enjoying a bowl of granola in the morning!

To make this recipe gluten free, just swap the oats for gluten free oats. They can be found in most organic supermarkets. So easy!

In this recipe I used steel cut oats as I prefer the texture for granola. However, you can used rolled oats for more texture if you prefer.

Almonds and Pecans

There are two of my favourite nuts. They are packed with nutrients such as vitamin E, protein, calcium, magnesium and more. Pecan and almonds are also a great source of fibre and although they are quite high in calories, they contain mostly monounsaturated fats.

I leave them whole in this recipe as I enjoy the crunch they give to the granola. If you prefer, you can roughly chop them before adding them to the oats.

Chia Seeds and Sunflower Seeds

Adding seeds to this granola recipe gives the nutritional value a boost, adds crunch and extra flavour.

Chia and sunflower seeds are an excellent source of fibre, protein and also other essential nutrients such as omega-3 (chia seeds) and vitamin E (sunflower seeds).

If you wish, you can substitute for other seeds.

Honey

Using honey provides sweetness without using sugar. It contains mostly monosaccharides, which are a lot easier to digest than the disaccharides found in table sugar. It also contains anti-oxidants.

Apart from anything else, the flavour of honey is delicious and is what makes this granola recipe stand out.

You can used different types of honey according to your personal preference and what is available. I prefer to use a light flavoured honey, such as ‘flower’ or ‘acacia’. ‘Pine’ honey will have a much stronger flavour, for example.

One important thing to bear in mind is that it has become a widespread practice to mix honey with flavoured sugar syrup, thereby removing any benefits of eating real honey. Although this is strictly illegal in most countries, it still happens so I try to buy organic and local when I can in order to avoid this.

Coconut Oil

Depending on which coconut oil you use, it can bring a subtle flavour to this granola. I have not noticed it personally, and I enjoy the flavour of coconut, but if you prefer, you can use sunflower oil.

Vanilla Extract and Salt

These ingredients are important because they really bring out the flavour of the granola. Don’t miss them out!

How to make Homemade Honey Granola with Almonds and Pecans

This recipe really couldn’t be any easier.

Turn on the oven to 150°C fan. Line a baking tray with baking parchment (this will help when transferring the granola to a jar).

First, warm the honey and coconut oil until they are slightly runny. This will help when mixing the ingredients together. You can melt them either in the microwave or in a water bath.

Next, place all the dry ingredients in a mixing bowl and then pour the coconut oil, honey and vanilla on top. Mix well with a wooden spoon or danish dough hook until all of the oats, nuts and seeds are coated.

Spread the granola mixture onto the baking parchment on the baking tray and bake in the oven for 30 mins until the granola is golden brown.

Leave to cool completely and transfer to an airtight container until you are ready to use it.

Serve with Greek yoghurt and fresh and/or dried fruit for breakfast or as a protein-rich snack throughout the day.

How to Store Homemade Honey Granola with Almonds and Pecans

Homemade Honey Granola with Almonds and Pecans will last up to four weeks in an air tight container at room temperature. Why not double or triple the recipe and have breakfast sorted for the next few weeks?
