Low Carb Savoury Bites with Almond Flour, Garlic and Herbs: Gluten and Dairy Free

Going gluten-free or low-carb can make finding tasty snacks and sides a challenge. But these Low Carb Savoury Bites check all the boxes: thanks to the almond flour, they’re filling, they pair wonderfully with eggs or soup instead of bread, and the garlic, herbs, and a special secret ingredient will leave your taste buds wanting more! Even those of us not following a special diet in our family can’t get enough of them!

As an added bonus, these savoury snacks are incredibly easy and quick to make. I like to whip up a big batch to have them to hand all week!

Ingredients Needed to Make Low Carb Savoury Bites with Almond Flour, Garlic and Herbs

These snacks are based on the GAPS diet basic bread/muffin recipe found in the GAPS book.

Makes 24 bite-size savoury snacks.

To make them you will need:

  • 250g almond flour
  • 3 eggs
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1 tbsp mustard (check the ingredients of the mustard if you are on a strict diet to make sure it doesn’t contain any ingredients that you should avoid)
  • 1 tbsp herbes de Provence
  • 2 tsp dried garlic powder or 2 cloves of fresh garlic, crushed

Almond Flour

This is a staple ingredient for most low-carb diets. It can, however, get expensive. I like to buy almond flour in bulk from Costco.

Eggs

The quality of the eggs you use will affect the overall nutritional value of these snacks. I suggest buying the best quality you can afford. I like to buy at least free range eggs, and I get organic whenever I can.

Olive Oil

I like to use olive oil in this recipe because I want it to be dairy free and I think the taste of olive oil is better for a savoury snack than coconut oil would be, for example. You can however replace the olive oil for whatever oil you prefer, or even use melted butter or ghee.

Mustard

This is my secret ingredient! Adding mustard to these low carb snacks gives them an extra savoury flavour that almost ressembles cheese. It will really help to bring out the flavour of the garlic and herbs, so don’t leave it out!

Having said that, do make sure you read the ingredients of the mustard before you use it. Some mustards contain sugar and preservatives, which are not compatible with certain diets.

Herbes de Provence

Here in France, these dried herbs are very common and make an excellent addition to these snacks.

Garlic

Either fresh or dried garlic would work here – use whatever you have to hand. You will get a stronger garlic taste from using fresh garlic, so feel free to reduce the amount to 1 clove if you prefer.

How to Prepare Low Carb Savoury Bites

Making these Low Carb Savoury Bites couldn’t be easier.

Start by preheating your oven to 180°C fan.

Then, simply add all of your ingredients to a large bowl and mix using a wooden spoon.

To bake them, I like to use a mini muffin silicone mould.

I place 1-2 tsp of the mixture into each hole and bake for 15 mins. My mini muffin mould makes bite size muffins, if your’s is bigger, you may need to cook them for longer. When cooked they should be light golden brown.

If you don’t have a mini muffin mould, use a small cookie scoop to make balls of the mixture and place them onto a baking tray. Alternatively you can use two spoons to create small mounds on the baking tray.

Make sure you line your baking try with parchment paper if it is not non-stick. Flatten each ball with the back of a fork and bake for around 12 mins until the Savoury Bites are golden but not too brown. If they brown too much they will be dry and not as good.

TIP: If you use the cookie scoop and fork method, wetting your utensils regularly will ensure that the mixture does not stick too much. I like to keep a cup of water nearby that I can dip the scoop and fork into as needed.

Which Diets are these Low Carb Savoury Bites Appropriate For?

These delicious herby snacks can be eaten as part of many specific diets including:

  • GAPS
  • Gluten Free
  • Dairy Free
  • Low-Carb/Keto
  • Paleo
  • Vegetarian
  • Whole 30

As mentioned above, the only ingredient you do need to be a little bit careful about is the mustard. Some commercial mustards may contain sugar, preservatives, alcohol or other ingredients that should be avoided depending on the diet you are following.

How to Store Low Carb Savoury Bites

These snacks can be stored for up to a week in an air tight container.

It is also possible to freeze them, they will defrost fairly quickly on the counter or you could freshen them up for a few minutes in the oven if you prefer.

What Can I Serve these Low Carb Savoury Bites With?

These savoury bites make a great addition to a salad, a soup or a plate of eggs. They are also perfect for a lunch box and will bring a bit of variety to any meal.

You can also serve them as part of a charcuterie board or apéritif (as we say over here in France!) with a nice glass of wine.

I also like to have them on hand as a little snack for my children after school or while they are waiting for their lunch.

Because they are savoury and only contain good, whole ingredients, I don’t hesitate to serve these savoury bites at any time of day. Whether it is for breakfast, lunch or dinner they always go down a treat.

What Variations Can I Make to These Low Carb Savoury Bites?

You can really customise these bites with whichever herbs and spices you like. Zaatar would be a great alternative, or you could try Italian seasoning for a different flavour. If you’re not keeping it dairy-free, adding a handful of grated cheese or crumbled feta can take them to the next level. For an extra savoury crunch, why not toss in some bacon bits?
