Why You Will Love this Easy Ground Beef Stroganoff Recipe
When I was young, I used to love my Dad’s beef stroganoff. He used slices of steak, plenty of onions, mushrooms and sour cream. It was one of my favourite meals! These days, buying steak is a luxury, especially for my large family of 6. Also, I find that steak can quickly overcook and become tough when added to a sauce. That’s why I decided to try my Dad’s recipe with ground beef instead.
Now, I have a cheaper option that is just as delicious! It can simmer for as long as I need it to and it still has all the great flavours of the onions and mushrooms. I like to add a bit of garlic, and I now use crème fraîche instead of sour cream since that is what I can buy here in France.

Ingredients Needed to Make Ground Beef Stroganoff
Serves 4-6 depending on appetite
- 500g ground (minced) beef
- 1 onion, sliced
- 125g chestnut mushrooms
- 150g spinach (optional)
- 1 clove garlic, minced
- 200 ml stock/bouillon
- 1 tsp salt & pepper to taste
- 200g crème fraîche/double cream
- Rice or pasta to serve
Ground Beef
I like to keep my eye out for special offers on ground beef. My butcher does an offer every Wednesday and it is always cheaper than buying at the supermarket!
Mushrooms
I like to use chestnut mushrooms, but white button mushrooms work very well too.
Crème Fraîche
I use crème fraîche for this recipe, but you can use sour cream if you can get it. Double (heavy) cream will also work well, but will be less acidic. For a dairy free option, use coconut milk – it is just as delicious!
How to Make Ground Beef Stroganoff
Fry the onions gently for 3 mins until softened.
Add the ground beef and fry until cooked (5 mins)
Add the mushrooms and garlic and continue frying on a medium heat for 5 mins.
Add stock/bouillon, bring to the boil and simmer until the meat is cooked through (10 mins – 20 mins). You can leave it to simmer for even longer, just make sure you check that there is enough liquid in the pan.
Add the spinach 5 minutes before serving.
Add cream and heat through.
Serve with rice or pasta for a filling, delicious evening meal.
I love to make this recipe in my cast iron pan – it does such a good job of browning the meat.

Dairy Free Ground Beef Stroganoff
To make this recipe dairy free, simply swap the crème fraîche for coconut milk. It makes a delicious alternative that we all enjoy!
